Grilled chicken with grapefruit salad
2 portions – 1 a serving contains approx. 310 kcal
2 chicken breasts (after approx. 150 g each)
2 medium chicory
1 medium red grapefruit
200 g mushrooms
1 spoon of olive oil
4 tablespoons of natural yogurt
salt, ready-made herbal mixture for grilled dishes, any herbs for salads
Oil, lemon juice and herb seasoning to prepare the marinade for the chicken. Break the breasts a little and rub the marinade thoroughly, set aside in the refrigerator for about half an hour. Season with salt just before baking or grilling.
Divide the chicory into leaves and wash thoroughly. Peel the grapefruit, divide into small pieces, from which the films can be stripped, to remove the bitterness. Wash the mushrooms and cut them up. You can add them raw or baked, In a bowl, combine the chicory, pieces of grapefruit and mushrooms. Combine the yogurt with lemon and your favorite herbs and pour the sauce over the salad. Wrap chicken breasts in foil and put in an oven preheated to 200 ° C. Bake through 15 minutes wrapped and 10 minutes uncovered, to make them brown. We can also grill the breasts.
