Mildew – recipe

Pleśniak is a delicious fruit cake with a crispy base.

Mold – ingredients:

450 g of cake flour (about 2 i 3/4 glasses)
1 ankle (250 g) palm trees
1 a glass of sugar
5 eggs
250-300 g blackcurrant jam
1.5 teaspoons of baking powder
4 spoons of cocoa

Comments:

Of course, preserves are the best, which have the highest percentage of fruit.

Execution mold:

Mix the sifted flour with 1 a teaspoon of baking powder, we add 5 yolks, 2 spoons of sugar, a cube of margarine and knead the whole thing until it is homogeneous. We divide the resulting dough into two parts approximately in proportion 55 % do 45 %. Put most of it in the freezer for approx 2 hours. Add to the smaller part 4 spoons of cocoa, 2 spoons of sugar, 0.5 teaspoons of baking powder and then knead until a homogeneous mass, which we also put in the freezer for approx 2 hours. Beat the egg whites and add the rest of the sugar (about 3/4 glasses) and continue whipping until a stiff mass is obtained. Put baking paper on the baking tray. When the cakes in the freezer are hard, grate the light part on a grater and then pour it onto the baking tray. Now we can do two ways: we can knead the dough and spread the preserves or not knead and gently apply the preserves in small portions (about a teaspoon). The second method is a bit more time-consuming, but the dough is not so compact after baking. With the first method, the jam spreads very easily and the dough after baking is still very delicious 🙂 We chose the first option 🙂 With this option, we should get the cake layer shown in the photo:

Then spread the dough layer with the currant preserves:

We put a layer of egg white and sugar foam on the layer of preserves:

Also grate the dark part of the dough and sprinkle a layer of foam:

Bake the resulting cake at temperature 200-220 degrees C by 40-45 minutes.
