The key health processes that take place under the influence of wine take place in the stomach. There, the polyphenols contained in wine block the release of substances harmful to health, which result from the digestion of fatty foods. When digesting red meat and fatty foods, a lot of compounds harmful to health are produced. As a result of the action of enzymes that digest fats, free radicals are released in the stomach. They are essential in moderate amounts - the immune system uses them to destroy pathogenic microbes. But when there are too many of them, they become toxic. One of the most dangerous free radicals is malondialdehyde, which may contribute to the development of stomach cancer, atherosclerosis and diabetes. The latter two diseases cause, that more of the toxic protein responsible for the development of Alzheimer's disease goes into the blood. One of the researchers noted, that red wine significantly reduces the amount of malondialdehyde in the stomach. The scientist fed the rats with red meat, some he later served red wine extract. The research have shown, that an hour and a half after a meal in the stomachs of animals, who drank red meat with wine, there was much less malondialdehyde than the others. This is important information especially for people living in a temperate climate, m.in. in Poland, where it is cool most of the year and the body needs more calories, than what the fashionable Mediterranean diet offers.

Let's drink wine with fatty dishes

Research conducted among the inhabitants of Europe proved, that the consumption of everyone 100 g of pork or beef increases the risk of bowel cancer and colon cancer risk 70 proc. Women, who eat red meat twice a day, until Fr. 40 proc. more often than others, they have heart attacks. However, you should not completely exclude red meat from your diet, because it provides wholesome protein containing all amino acids and B vitamins. It is also the best source of easily digestible iron and zinc.

People who eat a lot of beef, pork or mutton are more likely to suffer from atherosclerosis, tumors, have metabolic problems. Mainly, because, that most of them do not drink red wine with their meals and eat too little vegetables and fruits, which also contain polyphenols. To avoid diseases resulting from eating excess red meat, enough, so traditional Polish dishes, such as pork knuckle or pork chop, wash it down with a glass of red wine.

In sum, wine in reasonable amounts protects against stomach cancer, because the polyphenols contained in it sweep free radicals out of the digestive system, which damage stomach tissues, they attack the DNA of cells and cause carcinogenic mutations in the genes. Red wine may also lower the risk of lung cancer in men. At the gentlemen, who drink one or two glasses of wine a day, the risk of lung cancer is as high as 60 proc. smaller. White wine does not have this effect, beer or liqueurs. At smokers, who regularly drank red wine, the risk of lung cancer was still higher than that of non-smokers.

On the other hand, white wine, maybe even Fr. 60% increase the secretion of gastric juices (one of the ingredients is hydrochloric acid), which, in excess, can damage the lining of the stomach and duodenum. This leads to erosions and ulcerations.

It is also worth remembering, that red wine increases the level of omega-3 fatty acids, protecting the circulatory system. So far, the best known source of these compounds has been fish. However, it turned out, that person, who consume moderate amounts of red wine, have a higher level of these acids regardless of the amount of fish consumed.
